Thira, the largest of the five islands which form Santorini, has no source of drinking water. But this is not a problem for locals, or tourists, as long as there is Vinsanto, one of the most appreciated sweet wines in the world. It is made from Trebbiano and Malvasia grapes. They are hand picked and kept in a well-ventilated room, to dry. Once dried, the grapes are pressed and the juice is poured into barrels for fermentation. After the initial fermentation the barrels are sealed and placed under the roof of the winery, sometimes even for ten years. It is kept for so long in the barrels, because only in time the wine can develop its deep golden-amber color, and a sweet, often nutty, taste.
